More Stable/Less Tippy?

What would be less tippy. Me: 6'0 / 195. Good on the SUP.

8'4 x 130L x 30" wide

or

8'8 x 140L x 29" wide

It all depends on shape.

Both boards have way too much volume for your weight if you are intermediate or experienced as you note.

Some of this unique to individual, perhaps cause of technique/foot placement. I swap boards with friends, we have different impressions over which ones are more stable

I am the same size as you. Decent on a sup and I find 120-130L to be the perfect size for me.

Wide tail, wide nose makes a bigger difference than absolute width (if talking 1" difference in width).
Rocker also plays a part as does rail shape and how it's finned.
